The Flavour Profile

There's something deeply comforting about a great Brazilian coffee — and this one delivers that warmth in every single cup. The Brazil Donas de Café is a medium dark roast, naturally processed single origin that feels like a proper hug in a mug. Rich roasted nuts open the cup, followed by smooth dark chocolate and a gentle thread of honey sweetness that lingers long after the last sip. This is a coffee that doesn't demand anything from you — it just gives.

The body is full and round, with a velvety, almost creamy texture that coats the palate beautifully. There's no sharpness here, no jarring edges — just a smooth, deeply satisfying weight that makes every brew feel indulgent.

Drinking it black? Black, this coffee is at its most honest and expressive. The roasted nut notes come forward confidently, grounded by deep dark chocolate and that soft honey sweetness keeping everything balanced. It's excellent as a pour over, V60, AeroPress, or cafetière — and absolutely sings as a stovetop (moka pot), where the natural richness of the bean really shines.

Drinking it with milk? Add milk and this coffee transforms into something genuinely special. The honey sweetness blooms, the chocolate deepens into something almost mocha-like, and the roasted nut notes give your flat white or latte a naturally nutty, toasty depth. It pulls beautifully as an espresso too — full-bodied, smooth, with natural sweetness that means you might not even need sugar.

The Little Details

Brazil Donas de Café is produced by a collective of women coffee farmers — "Donas de Café" translates as "Ladies of Coffee" — based in the Cerrado Mineiro region of Minas Gerais, Brazil. Grown at altitudes of 1,050–1,200 metres, the farms cultivate Yellow Bourbon and Mundo Novo varietals, processed using the natural (dry) method. The coffee is graded Specialty with a clean, consistent cup profile that reflects the region's long dry seasons and mineral-rich soils.

About the Process

Harvesting in the Cerrado Mineiro is done by mechanical strip harvesting, well-suited to the region's flat topography and large, open farms. At this time of year — typically May through August — the cherries ripen quickly and evenly under the intense Brazilian sun, and the farmers time the harvest carefully to pick at peak ripeness for the best possible sugar development inside the cherry.

Once harvested, the cherries go through flotation tanks, where water separates the dense, ripe cherries from any floaters — underdeveloped or damaged fruit that would compromise the cup. Only the sinkers move forward. This simple but important step is one of the unsung heroes of Brazilian specialty processing.

For the natural process, the whole cherries — skin, pulp, and all — are spread directly onto raised drying beds or patio floors and left to dry slowly in the sun. This is where the magic happens. As the cherry dries around the seed, the sugars and fruit flavours from the pulp slowly migrate into the bean itself, creating that characteristic natural sweetness, body, and complexity. The drying phase takes 3 to 5 weeks, and the cherries are turned regularly throughout the day to ensure even drying and prevent fermentation or mould.Once the cherries reach the ideal moisture content, they go to the dry mill for hulling — mechanically removing the dried outer layers to reveal the green bean inside — before final sorting, grading, and export. By the time Nick roasts these beans in our Canterbury roastery, the hands of dozens of women farmers, pickers, and processors have already shaped everything you taste in your cup.
