This light-medium roast Colombia has been carefully processed using the fully washed method, which strips away the fruit and brings clarity and brightness to the cup — letting the natural character of the Castillo bean shine through with notes of cola, fresh lime and ripe cherry.
Expect a light-medium body with a juicy, sweet texture — clean and refreshing with every sip. The sweetness is natural and effortless, making this a coffee that doesn’t need anything added to it.
This bean really sings as a filter coffee — V60, Aeropress, pour over, french press or Chemex will all do it justice. It’s a wonderful all-day coffee, bright enough to enjoy in the morning and easy enough to sip through the afternoon. We can also grind it fresh for you.

The Little Details
Finca El Limon is an 11-hectare family farm nestled in the mountains of Murillo, Tolima, Colombia, sitting at 1,800–2,050 metres above sea level. Owned and run by Fernando Alberto Salinas Castellanos and Aduar Oswualdo Salinas Castellanos, the farm dedicates 3.5 hectares to coffee, growing the Castillo varietal and processing it fully washed. This lot was selected as part of the prestigious Colombia Land of Diversity Auction.
About the Process
During the harvest, the cherries are carefully hand picked once peak ripeness is reached its delivered to the mill onsite. After sorting , the cherries are fermented aerobically , or in piles for 36 hours. The cherries are then pulped to remove the external fruit and washed with fresh spring water twice to remove any remaining mucilage. Once its clean, the coffee is evenly dispersed on raised beds to dry in the open sun for 11 days, or until the ideal moisture content is reached.
