The Little Details
This coffee comes from El Carmen Estate and Beneficio farm in a town called Ataco in the Apaneca Ilamatepec, Ahuachapan region in El Salvador. It's grown 1300 metres above sea level. This beans are fully washed and sundaried on clay patios. It's 100% Elite Bourbon beans.
About the Process
During the harvest, the cherries are hand-picked only when they are perfectly ripe and de-pulped the same day. the beans are then naturally fermented, washed with pure spring water, and sun dried on clay patios. the coffee is store using parchment paper in wooden silos to protect the freshness of the coffee beans and its left to rest for a minimum of 60 days and constantly monitored until the coffee bean reach uniform humidity and colour, defect coffee beans are remove. Finally, the coffee beans are prepare to export
