The Little Details
This coffee comes from Fazenda Rio Verde, located in Serra da Mantiqueira, in the Sul de Minas region of Minas Gerais, Brazil. Owned and farmed by Ipanema Agricola . The farms sit at altitude between 1,185 and 1,276 metres above sea level. It’s drawn from Yellow Catuaí varietals, naturally processed with anaerobic fermentation. A Cup of Excellence awarded coffee, ranked #15 in 2018.
About the Process
This 100% Yellow Catuai lot was harvested on June 26th 2024, from Blebe C27. The coffee was selectively hand harvest and then processedusing the traditional natural methodwith anaerobic fermentation. The cherries ferment for 90 hours before being dispersed on raised beds to dry for 381 hours. Afterwards, the coffee is bagged, rested and hulled to be prepared for export.
